EAST BEATS WEST SALT BEEF
This is a recipe we created for a new salt beef concept in East London. Slithers of meat homecured in a fenugreek and lemongrass-base, kimchi topping and little potato mash and ponzu onion to round things off
NOT SUSHI BUT SAMBAL
White fish delicately poached in a coconut broth. Gently soaking into flavoursome toasted cauliflower ‘rice’ it’s topped with a punchy purple vegetable & chilli sambal
A SORT OF AGEDASHI AUBERGINE
Chunks of aubergine in a rich, sticky tamarind marinade, spring onion, bonito & chilli flakes
SATAY FRIED CHICKEN
Finger-lickin’ satay fried chicken & crisp Asian veg with a light, uplifting dressing
